CH CH CH CHANGES....
We are moving, for the winter. This will be the first time in 22 years that I will be moving to a new town. The hard part was done in June when we took up residence in our 5th wheel. Now it is just a matter of hitching up our life and driving an hour down the road. Not very stressful. I will miss our family that is still here and our church. I'm hoping I can convince Mr. Sewalife to make the trip back a few times this winter for church or at least church activities like Christmas Eve Service. You'd think I was moving across the country, wouldn't you. I did mention it is only an hour away, right?
Second change? My daughter's wedding is coming up in September. I'm so excited for her. The first task once we are moved will be to sew something I can wear to the wedding, so I can actually attend the ceremony. The locations they have picked out are beautiful. Can't wait until I can post some pictures.
Third reason to be excited? Right after the wedding I will be whisked off to Fort St. John to spend a week with my first born, her husband and my incredible four grandchildren. I've never been to Fort St. John., but I will be packing my woollies, just in case.
Before my son goes back to University, I will have to get him to show me how to post some pictures here. Then next week, I can give you a peek at our new digs.
Off to pack up the few things that need to be packed!
THE BEST SPINACH PIE EVER
First let me tell you, if there was ever the "Perfect Food" my vote would be for the Spinach Pie. There is nothing I would rather have than Spinach Pie, except maybe Thanksgiving Turkey Dinner. The difference being I would eventually tire of turkey, but never Spinach Pie.
Spanakopitta
¼ cup pus 2 TBSP Olive Oil
½ lb scallions trimmed and finely chopped
about 2 bunches
1 ½ lbs spinach, trimmed and chopped
½ cup chopped fresh parsley
(1/8 cup dried)
¼ cup chopped fresh dill
1 egg, lightly beaten
¾ lb feta cheese, crumbled (more or less, depending on how much you like feta)
2 TBSP Parmesan Cheese
¾ tsp ground nutmeg
½ tsp ground cumin
½ tsp salt
¼ tsp freshly ground black pepper

x 18 sheets phyllo pastry, thawed according to package directions
¼ cup
melted butter
Or regular pastry (double crust )
Heat 2 tbsp oil in a heavy skillet, over medium heat. Add scallions and sauté for 5 to 7 minutes,
or until they are softened. Gradually
add spinach and cook, stirring until wilted, about 5 to 7 minutes. Transfer the vegetables to a colander, drain
completely and cool.
In a large bowl, combine spinach mixture, parsley, dill,
egg, ¼ cup olive oil, feta, parmesan, nutmeg, cumin, salt and pepper. Mix thoroughly with a wooden spoon.
Preheat oven to 375 degrees F. Unroll phyllo sheets and place them on a flat
surface, covered with wax paper and a damp tea towel to prevent them from
drying out. Brush a 10 inch pie plate
lightly with a little butter. Lay 1
phyllo sheet on the counter and brush lightly with melted butter. Lay it over the pie plate, letting corners
hang over the edges. Repeat with 3 more
phyllo sheets, placing each sheet at right angles to the previous one. Gently press the phyllo into the base of the
pie plate. Tightly roll the
overhanging dough up all around so that it rests on the rim of the pie
plate. Spoon spinach filling into the
shell.
Brush a sheet of phyllo with butter and roll it length wise
into a ½ to ¾ inch wide rope. Place it
over the filling, forming a semicircle along the edge. Repeat, placing the second to complete the
circle. Continue with buttered, rolled sheets, forming
a spiral towards the centre. Leave
a 1 inch hole in the centre to allow
steam to escape. Brush the top with the
remaining butter.
Bake for 20 to 30 minutes, or until golden brown. Let cool for at least 10 minutes before
serving. This part is really hard.

My Condensed Life With No Boundaries
Sew.. here we go! Starting a blog has been a goal of mine for well over a year. I decided to do a little planning first, unlike my reading habit of starting at the back and leafing through until I get to Chapter 1. Who does that? Our lives feel like they've been plucked out of the ocean and into a fish bowl. We're still adjusting the oxygen levels, and water ph but we're still here. Truthfully, it was not the "ocean" we were in but a life of too much stuff, taking up too much space, with too little time or energy to take care of things or us for that matter. Solution? Weed out the stuff, reduce the space, and focus on the important things.
Easier said than done, yes I repeat, EASIER SAID THAN DONE. We gifted, sold, burned, recycled, and carted truck loads of belongs to the thrift store and the dump. (Why do we keep some of the things we do? - that's for another post.) Some things came with us. Things we considered to be important, essential, and "can't live without it" items. Other things seemed to follow after us, wanted or not. The newest revelation is that a lot of those things we brought with us have neither a home, nor are they needed, necessary or wanted. I will need plenty of prayer to get it all sorted out, I'm sure. Hopefully I'm learning to make better decisions?
Following along on this blog you will watch as I readjust and hopefully create a simpler life with more room for the ones I adore: Jesus, my husband, my children and grandchildren, my friends, our dogs and the things I am passionate about music, home schooling, sewing, quilting and other crafts. You will walk with us as we transition from a 3100 sq ft home where we raised our children, to a 220 sq ft travel trailer. (Granted, we may choose this only temporarily, but no decisions yet.) While we decide, I plan to keep sewing, quilting, knitting, crocheting, crafting, gifting, making music, reading, learning and blogging! Stitch along with me to create my new life.
